Hot Honey Pasta Salad
Imagine all of the freshest summer veggies together with pearled mozzarella balls and your favorite noodle all covered in the most delicious homemade Hot Honey dressing. This Hot Honey Pasta Salad is going to be your go to dish in the warmer months.

Ingredients
- 8 oz noodles
- 2 cups grape tomatoes
- 2 mini english cucumbers
- 1 cup arugula
- ½ cup pearled mozarella balls
- ¼ cup + 2 Tbsp olive oil
- 3 tbsp hot honey
- ½ lemon juiced
- ½ tsp Italian seasoning
- ½ tsp red pepper flakes more or less to taste
- ¼ tsp black pepper
- ½ tsp salt
Instructions
- Cook the noodles according to the box instructions. Drain and move to the refrigerator to cool.
- While the noodles cook, prep the ingredients. Halve and quarter the tomatoes. Chop the cucumbers into even pieces (I like to use my vegetable chopper for this).
- In a large mixing bowl, add olive oil, hot honey, lemon juice, and seasonings. Whisk together until honey & olive oil is combined.
- Add the cooled pasta into the large bowl with the salad dressing and toss again.
- Fold in the rest of the pasta salad ingredients: cucumbers, cherry tomatoes, arugula, and pearled mozzarella. Toss together. Enjoy!

Notes
- Double batch the dressing and use it on salad, rice, quinoa, salmon, chicken, shrimp, sandwiches, roasted veggies, etc.
- Store your pasta salad in an airtight container for up to 3 days.
