Ingredients

  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 teaspoons sour cream optional, for serving
  • 1 teaspoon fresh chives optional, for serving

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with aluminum foil or parchment paper for easy cleanup.
  2. Thoroughly wash and dry the sweet potatoes. With a fork, pierce the potatoes 5 to 10 times all over to allow steam to escape during baking.
  3. Brush each sweet potato with olive oil, then season with salt and pepper all over.
  4. Place sweet potatoes on the prepared baking sheet and bake in the preheated oven for 45 to 60 minutes, or until they are tender and fully cooked through. A fork should easily pierce through the skin and flesh when they're done.
  5. Once baked, remove sweet potatoes from the oven and let them rest for 5 minutes to allow the insides to settle. Slice open and, optionally, serve with a 1/2 teaspoon of sour cream and a sprinkle of chopped chives on each potato.
