Ingredients

  • 1 pound green beans washed and ends trimmed
  • 3 quarts water plus more for ice bath
  • 2 teaspoons salt
  • Ice cubes about 4 cups

Instructions

  1. Add water and salt to a large pot or sauce pan. Heat over high heat and bring to a rolling boil.
  2. Prepare an ice bath by setting out a large bowl filled with water and ice,
  3. Add the beans to the hot water and cook for about 2-3 minutes or until the beans are bright green and crisp-tender.
  4. Remove the green beans from the hot water and immediately transfer them to the iced water. Drain and use as desired.

Notes

  • You can serve the beans right after blanching or store them in an airtight container or resealable plastic bag in the refrigerator for up to 2 days. Blanched green beans can be stored in a freezer bag and freeze for up to 8 months.
