Ingredients

  • 1 cup low-sodium broth or water
  • 1 cup instant couscous dry
  • 1 tablespoon extra-virgin olive oil
  • 1/2 teaspoon salt
  • parsley optional, fresh herbs; garlic minced, green onions chopped
  • dill

Instructions

  1. In a medium saucepan, bring the broth or water to a boil. Add 1 tablespoon of olive oil and 1/2 teaspoon of salt.
  2. Stir in the couscous, cover the saucepan with a lid, and remove from heat. Let it sit for 5 to 10 minutes or until the liquid is fully absorbed.
  3. Fluff the couscous with a fork. Optionally, mix in fresh herbs, sautéed minced garlic, or chopped green onions for added flavor.
