How to Cook Deer Meat

Ingredients

  • 1 pound Venison tenderloin
  • salt and pepper to taste

  1. Pat the venison dry with paper towels. Line a rimmed baking sheet with paper towels and then sprinkle the tenderloin with salt on both sides. Place on the baking sheet and cover with additional paper towels. Refrigerate for 4 hours or overnight.
  2. Remove the tenderloin from the fridge an hour before cooking. Sprinkle with fresh black pepper.
  3. Preheat a grill, smoker, or oven to 400º F. Roast the tenderloin until it reaches an internal temperature of 140ºF.
  4. Remove from the oven when done and place on a cutting board to rest for 5 minutes.
  5. Slice the tenderloin into medallions and serve!
