How To Dehydrate Apricots in a Dehydrator

Fresh and nutritious dehydrated apricots made in a dehydrator without sulfate dioxide solution. This all-natural fruit makes a great snack for any time of day.

Ingredients

  • 2 pounds apricot about 20 apricots, fresh
  • 1 cup lemon juice
  • 4 cups of water

Instructions

    Cup of Yum
  1. Place apricots in a large bowl of water to loosen any dirt, then place in a colander and rinse with cold water.
  2. Cut each apricot in half and remove the pit. Place halves in a large bowl with the water and lemon juice.
  3. Let them soak for 10 minutes.
  4. Drain and lay flat on a baking sheet lined with paper towels or a clean kitchen towel and pat dry.
  5. Press down the halves until they are flat.
  6. Arrange in dehydrator trays skin side down.
  7. Dehydrate at 135°F for 12-24 hours. The time will vary based on the size of the apricot and the dehydrator.
To Dry Apricots in the Oven
  1. After Step 4 above, place apricots on baking sheets or jelly roll pans, and put them in the oven at 175°F for 10-12 hours. Rotate pans and flip the apricots over at the halfway point of the drying time.

Notes

  • These apricots are not treated with sulphur dioxide, which is a preservative that will keep the apricots their orange/yellow color.
  • Apricots in the lemon solution will dry to a rusty brown/orange color.
