How to Eat Brie Cheese (Whipped Brie Edition)

I'm going to show you how to eat brie cheese the whipped way! This gut-healthy recipe is simple and delicious.

Ingredients

  • 300-350 g triple cream brie, room temperature and rind removed *important to only use triple-cream brie at room temperature - this is the only type that will whip to the right consistency*
  • 5 asparagus stalks, shaved with a vegetable peeler
  • 3-4 radishes, sliced thinly, fresh or quick pickled
  • zest from one lemon
  • fresh mint for garnish
  • pinch chili flakes
  • olive oil
  • sea salt
Strawberry compote
  • 1 1/2 cups chopped strawberries
  • 1 tsp lemon juice
  • 2 tbsp sugar

  1. Remove the brie from the fridge about an hour before you want to make this dip, to bring it to room temperature. Once at room temperature, use a knife to remove the rind.
  2. Make the strawberry compote by adding the chopped strawberries, lemon juice and sugar to a small pot or pan, bring to a simmer over medium heat and then turn to medium-low. Cook, stirring occasionally, until strawberries are cooked down, about 5-10 minutes. You want it to be a jammy consistency. Remove from heat and let cool.
  3. While the compote is cooling, add the sliced radishes to a small bowl, cover with red wine vinegar and add a pinch of salt and sugar. Let sit.
  4. Place the brie (with rind removed) into a food processor. Start by whipping the brie on high speed for about 3-4 minutes. Then, pause and scrape down the sides of the bowl (the brie could be quite sticky still). Start whipping again, scraping down the sides of the bowl as needed. It could take up to about 10 minutes total for the brie to become lighter in colour and smooth in texture, almost like whipped butter, it should be fairly smooth.
  5. To assemble the appetizer, spread the brie onto a low bowl or plate. Spread a layer of the strawberry compote and then top with shaved asparagus, radishes, zest of one lemon and mint leaves. Finish with a sprinkle of chili flakes, salt and drizzle of olive oil. Enjoy with crackers or crostini.
