Ingredients
- 1 medium butternut squash
- 1/2 tablespoon salt
- 1 tablespoon extra virgin olive oil or avocado oil
- A pinch of black pepper
- 1/2 teaspoon cinnamon
Instructions
- Preheat the air fryer to 375°F (190°C).
- Trim off the bottom end of the butternut squash and use a sharp vegetable peeler to remove the skin.
- Halve the squash lengthwise, scoop out the seeds, and then cut the squash into 1-inch cubes.
- In a large bowl, toss cubed squash with oil, salt, black pepper, and cinnamon until evenly coated.
- Place squash cubes in a single layer in the air fryer basket.
- Cook for 15-20 minutes, shaking the basket halfway through cooking time.
- Once squash cubes are fork-tender and golden brown, remove them from the air fryer.
- Sprinkle with additional coarse salt if desired.
- Serve warm as a flavorful and healthy side dish.

- If you want to prepare a whole butternut in halves, I recommend not peeling. The time will be extended by about 15 to 20 minutes of cooking time.
