Ingredients

  • 1 pound pork skin
  • 1/2 teaspoon sea salt
  • avocado oil for frying

Instructions

  1. Line a baking sheet with parchment paper and preheat the oven to 300°F.
  2. Carefully remove any lard you can without cutting through the skin.
  3. Cut pork into 1-inch by 2-inch rectangular pieces.
  4. Place pork skins on the baking sheet, fat side-down, in a single layer. Season with salt.
  5. Bake until dried and crispy, about 1 to 2 hours.
  6. Remove pork rinds from the baking sheet and drain on paper towels. Eat them as is or allow them to cool and deep fry them for added flavor.
  7. Heat avocado oil in a dutch oven at 350°F (use a meat thermometer to check the temperature).
  8. Fry the rinds in small batches, being careful not to overcrowd the pot. Cook for 1 to 3 minutes until they begin to get puffy. Push them down into the oil if they begin to float. Remove when cooked well and place on a paper towel to drain. Repeat with remaining pork skins.
