Ingredients
- 1 pound pork skin
- 1/2 teaspoon sea salt
- avocado oil for frying
Instructions
- Line a baking sheet with parchment paper and preheat the oven to 300°F.
- Carefully remove any lard you can without cutting through the skin.
- Cut pork into 1-inch by 2-inch rectangular pieces.
- Place pork skins on the baking sheet, fat side-down, in a single layer. Season with salt.
- Bake until dried and crispy, about 1 to 2 hours.
- Remove pork rinds from the baking sheet and drain on paper towels. Eat them as is or allow them to cool and deep fry them for added flavor.
- Heat avocado oil in a dutch oven at 350°F (use a meat thermometer to check the temperature).
- Fry the rinds in small batches, being careful not to overcrowd the pot. Cook for 1 to 3 minutes until they begin to get puffy. Push them down into the oil if they begin to float. Remove when cooked well and place on a paper towel to drain. Repeat with remaining pork skins.
