Ingredients

  • 3 cups rolled oats old-fashioned
  • 3 tablespoons brown sugar
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • ⅓ cup honey melted
  • ¼ cup canola oil coconut oil or a neutral-flavored oil will also work
  • 2 large egg beaten well, white
  • 1 teaspoon vanilla

  1. Preheat the oven to 300°F and line a cookie sheet with parchment paper. In one large bowl, mix together the oats, brown sugar, salt, and cinnamon.
  2. Once combined, add the fruit and nut combination of choice.
  3. In a second smaller bowl, combine the melted honey, canola oil, egg whites, and vanilla. Once thoroughly mixed, pour the honey mixture over the oat mixture. Mix until combined.
  4. Place onto the baking sheet and press firmly into clumps. Bake for 20 to 30 minutes until the clusters are light golden in color.
  5. Remove and let cool completely, then break into pieces.
  6. Store in a closed container for up to a week, or freeze for up to 3 months.

Notes

  • Press the granola mixture firmly when spreading on the baking sheet to encourage clumping.
  • Customize nuts and dried fruit according to preference for varied textures and flavors.
  • Store clusters in an airtight container for up to one week or freeze for up to three months to maintain freshness.
  • The recipe can be baked as a solid layer and broken into clusters after cooling or shaped into individual clumps before baking for chunkier clusters.
