Ingredients

  • 3 pounds plum tomatoes halved lengthwise
  • 1/4 cup olive oil
  • Salt and freshly ground black pepper to taste

  1. Preheat oven to 400 degrees. In a large bowl, combine tomatoes, garlic, herbs, and olive oil, tossing gently.
  2. In a large bowl, add tomato halves, olive oil, and salt and pepper to taste (I like 1 tablespoon salt and 1 1/2 teaspoons pepper). Spread evenly on a rimmed baking sheet and roast for 45 minutes.
