How To Successfully Make Roasted Beets

Ingredients

  • 4 lbs beets a mixture of about 6 medium to large beets.
  • 1 tbsp olive oil
  • 1 tsp salt

Instructions

  1. Chop the stem and root (tail) off using a sharp knife.
  2. Soak the beets in a bowl of cold water for a couple of minutes and then scrub their skins. A new, vegetable only dish scrubby sponge is ideal.
  3. Brush the tops and sides of the beets with oil and add salt evenly over the beets
  4. Cover with foil and place in a pre heated 400° F / 205° C oven for 45 to 60 minutes until done. Cut up Beets will require less cooking time.
  5. When done, remove Beets from the oven. Allow to cool before handling.
  6. If you want to remove the skins, use a piece of kitchen paper to help grip the beet, and scrap away the skin with a paring knife.
  7. Once peeled, cut Beets into whatever shape you would like - chunks, wedges, rounds.
