Huevos con Chorizo (Eggs with Chorizo)

Huevos con Chorizo is a classic Mexican breakfast consisting of scrambled eggs cooked with freshly crumbled raw Mexican chorizo sausage. Ingredients

  • 4 Mexican chorizo sausage (raw)
  • 6 egg
  • salt (to taste)
For Serving (Optional)
  • refried beans (homemade or store bought)
  • cotija cheese (or feta cheese)
  • corn tortilla or flour tortillas
  • avocado (sliced)
  • green onion (finely diced for garnish)
  • jalapeño (fresh or pickled, or hot pepper of choice)
  • Pico de Gallo
  • hot sauce

Instructions

  1. Heat a large frying pan on medium heat. Use a knife to carefully slice the casing of each chorizo sausage down the center. Discard the casing and add the meat to a frying pan.
  2. Use a spatula to crumble the meat into bite sized pieces. Allow the meat to sauté for 5-7 minutes or until browned.Note: as the meat cooks it will release oil. Depending on the brand of sausage used there may be excess oil left in the pan. If needed, remove oil with a spoon to leave only enough to lightly coat the bottom of the pan.
  3. In a small bowl whisk together the eggs. Pour over the cooked chorizo and allow to set for 1 minute before stirring. Then, gently stir the eggs and chorizo and cook to preferred scrambled egg doneness, about 2-3 minutes. Season to taste with salt.
  4. Serve with a side of refried beans topped with cotija cheese, corn tortillas and sliced avocado. Enjoy!

Notes

  • Mexican chorizo is raw and must be cooked thoroughly, unlike cured or smoked varieties.
  • When substituting Spanish or Portuguese chorizo, dice and fully cook before adding eggs.
  • Serving with refried beans, cotija cheese, tortillas, avocado, green onion, jalapeño, pico de gallo, and hot sauce adds traditional complementary flavors.
