Hummus Breakfast Toast
A perfect vegan, mediterranean breakfast: Whole grain toast topped with hummus, red pepper strips and a sprinkle of pine nuts

Ingredients
- ½ tsp extra virgin olive oil
- 1 small red bell pepper, sliced
- 1 large slice whole grain bread
- 1 tbsp hummus
- 1 tsp pine nuts
Instructions
- Heat olive oil in small pan, once hot saute peppers for 2-3 minutes.
- Toast bread, spread hummus, top with peppers and sprinkle pine nuts.

Notes
- If you don't have hummus on hand, I suggest you use tahini. Just mix it with a teaspoon of water and a bit of lemon juice and spread it on your bread.
