Hummus Quesadillas with Avocado and Tomato

We love these hummus quesadillas! Crispy, golden tortilla shells filled with smooth and creamy hummus. Top with a quick avocado tomato salad and your family will go crazy for them!

Ingredients

  • 4 tortillas, flour, corn, whatever you choose!
  • ½ cup Hummus, or more if desired
  • olive oil spray or butter for toasting
  • 1 avocado, chopped
  • 1 handful cherry tomatoes, chopped
  • 1 Drizzle of olive oil
  • 1 lime, juiced
  • kosher salt and pepper
  • Pickled onions, for serving

Instructions

  1. Spread ¼ cup of hummus on 2 tortillas. Place another tortilla on top.
  2. Heat butter or oil (or use olive oil spray) in a nonstick skillet over medium low heat. Place a quesadilla in the skillet and cook on each side for about 5 minutes, until golden and toasty. Repeat with the remaining quesadilla.
  3. In a bowl, toss the avocado and tomatoes with the olive oil and lime juice. Season all over with salt and pepper.
  4. Serve the quesadillas with the avocado salad on top. Top with pickled onions.
