This delicious hummus dressing is the best way to use up leftover hummus. It's great for kale salad, grain bowls, or any dish needing a creamy, tangy flavour boost.

Ingredients
- 3 tablespoons Hummus, store-bought or homemade hummus
- 2 tablespoons olive oil, or water for an oil-free version
- 1 tablespoons lemon juice, more to taste
- 1 tablespoon maple syrup
- 1 teaspoon Dijon mustard
- ¼ teaspoon Sea salt, more to taste
- pinch cayenne pepper (optional)
Instructions
- Place all ingredients in a medium-sized bowl and whisk until smooth and creamy. Or add everything to a mason jar and shake vigorously.
- Taste and adjust the seasoning. Add more lemon juice if you want a more acidic dressing, and more salt to boost the savoury flavours
