Hummus Stuffed Peppers
These mini sweet peppers are halved and filled with creamy hummus, then topped with minced red onion, grape tomatoes, and crumbled feta. The result is a fresh, colorful, and easy-to-make snack or appetizer combining crunchy peppers with savory, tangy, and creamy elements from the filling and toppings.
Ingredients
- ¼ cup hummus
- 5 sweet mini peppers
- 1 TBSP red onion minced
- 1-2 TBSP grape tomatoes chopped
- 1 TBSP feta cheese crumbled
Instructions
- Slice the top off of each pepper and discard, or leave the top on for a handy dandy pepper handle.
- Next slice each pepper lengthwise.
- Top with hummus and sprinkle on all your favorite toppings.
- Dig in!

- For more flavor, drizzle olive oil or balsamic vinegar over stuffed peppers before serving.
- Add hot sauce or Sriracha for a spicy variation.
- Fresh chopped parsley can be used as a garnish for color and freshness.
