Hummus Toast with Scrambled Eggs
This quick and easy breakfast toast is made with hearty, whole grain bread, creamy hummus, scrambled eggs and za'atar.
Ingredients
- 4 lices whole grain bread (toasted)
- ½ cup hummus (any flavor)
- 1 medium tomato (thinly sliced )
- salt to taste
- black pepper to taste
- 8 egg scrambled or cooked as you wish
- 2 teaspoons Za’atar
- scallions (optional garnish)
Instructions
- To prepare breakfast toast, spread 2 tablespoons of hummus on top of each piece of toasted bread. Lay two slices of tomato on top of each slice. Sprinkle with salt and pepper to taste.
- Next, top with warm eggs cooked to order (I like scrambled for this recipe) then sprinkle each piece with 1/2 teaspoon za'atar. Garnish with scallions to serve if you wish.
