Hummus Toast with Scrambled Eggs

This quick and easy breakfast toast is made with hearty, whole grain bread, creamy hummus, scrambled eggs and za'atar.

Ingredients

  • 4 lices whole grain bread (toasted)
  • ½ cup hummus (any flavor)
  • 1 medium tomato (thinly sliced )
  • salt to taste
  • black pepper to taste
  • 8 egg scrambled or cooked as you wish
  • 2 teaspoons Za’atar
  • scallions (optional garnish)

Instructions

  1. To prepare breakfast toast, spread 2 tablespoons of hummus on top of each piece of toasted bread. Lay two slices of tomato on top of each slice. Sprinkle with salt and pepper to taste.
  2. Next, top with warm eggs cooked to order (I like scrambled for this recipe) then sprinkle each piece with 1/2 teaspoon za'atar. Garnish with scallions to serve if you wish.
