Imitation Crab Ceviche

Ingredients

  • 1 pound imitation crab meat shredded
  • 1 large ripe avocado diced
  • 1 medium red onion finely chopped
  • 2 medium tomatoes seeded and diced
  • 1/2 cup cucumber diced
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup fresh lime juice about 2 limes
  • salt and pepper to taste

  1. In a large mixing bowl, combine the shredded imitation crab meat with diced avocado, red onion, tomatoes, cucumber, and chopped cilantro.
  2. Add fresh lime juice over the mixture and season with salt and pepper. Gently toss to ensure all ingredients are well coated and the flavors begin to meld.
  3. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, allowing the flavors to fully develop and the ceviche to chill.
  4. Serve the chilled imitation crab ceviche with tortilla chips or over a bed of greens for a refreshing appetizer or light meal.
