Indian Spiced Zucchini and Tomatoes

Loaded in flavor as some turmeric for it’s anti-inflammatory properties, this Indian spiced zucchini and tomatoes dish will not disappoint your taste buds.

Ingredients

  • 1 onion diced, medium
  • 2 tbs ginger (minced or grated)
  • ¼ tsp red chili flakes
  • 2 cloves garlic (grated)
  • 1 tbs cumin
  • ½ tbs Turmeric
  • 1 tsp Coriander
  • ½ tsp salt sea salt
  • 1 zucchini or 2 medium zucchini - cut large dice, large
  • 2 tomato diced
  • ¼ c cilantro for garnish, fresh
  • ¼ c PLAIN yogurt (for garnish optional)

Instructions

    Cup of Yum
  1. Spray medium sauce pan with non-stick cooking spray and sautee onions, ginger and chili flakes for 3-4 minutes or until onions become tender.
  2. Add garlic, cumin, tumeric, coriander and salt – cook additional 60 seconds.
  3. Stir in zucchini and sautee 2 minutes.
  4. Add tomatoes, stir and bring to simmer.
  5. Cover and let cook for 15-20 minutes or until squash is tender.
  6. Garnish with fresh cilantro and plain yogurt if you wish.

  • Excellent source of Vitamin C, good source Vitamin A
