Individual Sourdough Caprese Pizzas

Tomatoes and mozzarella combine with toasted sourdough and balsamic vinegar to create individual Caprese Pizzas that are great alone or with a green salad.

Ingredients

  • 4 slices sourdough bread
  • olive oil
  • ½ c mozzarella cheese
  • 1-2 Roma tomatoes, sliced
  • balsamic vinegar
  • salad greens (for serving, if desired)

Instructions

  1. Preheat your oven broiler to medium.
  2. Place a piece of aluminum foil on a baking sheet.
  3. Lay bread slices on foil and drizzle with olive oil.
  4. Place bread in oven, and broil until golden and toasted (1-3 minutes depending on your broiler).
  5. Remove from oven and sprinkle bread with cheese.
  6. Top with tomatoes and finish off with a drizzle of balsamic vinegar.
  7. Return the pizzas to the oven for an additional 2-3 minutes, or until cheese is melted and golden.
  8. Serve alone or with greens.
