Instant Pot Artichokes

Ingredients

  • 2 large artichokes
  • 2 cups water
  • 1 tablespoon garlic minced
  • 1 teaspoon salt
  • 1 bunch of parsley

Instructions

  1. Wash and dry your artichokes and then cut about 1 inch off the top to expose the inside.
  2. Pull off any dry, dead leaves from the outside and discard. Using kitchen shears, snip off the tip of each leaf.
  3. Pour the water in your Instant Pot and stir in the garlic and salt.
  4. Place the trivet inside and place the parsley inside, pushing it to the side. Then, place your cleaned artichokes in the pan, cut side down.
  5. Cover, set the pot to seal, and cook at manual high pressure for 15 minutes. Let steam release naturally.
  6. Use a knife to poke the bottom of the artichoke. If it goes in easily, it's done!
  7. Dip the leaves in melted butter or your favorite sauce and enjoy!
