Ingredients
For the meat:
- 1 TBS coconut oil or olive oil
- 3 cloves garlic minced
- 3-4 lbs chuck roast cut into 4 equal-ish pieces, boneless
- ¼ cup apple cider vinegar
- 1 TBS oregano
- ¼ teaspoon black pepper
- 2 chipotle chili peppers from can, in adobo sauce, plus 1 tablespoon adobo sauce
- ¼ cup lime juice
- 2 cups beef broth low sodium, or chicken broth
To serve & Garnishes:
- 1 lime cut into wedges
- 12 small flour tortillas
- 1 red onion sliced thinly
- 1 tomato chopped
- 1 bell pepper seeded and sliced thinly, yellow or orange
- 1 medium avocado peeled, pit removed, and sliced thinly
