Ingredients
- 3 pound chuck roast
- 2 chipotle chilies in adobo chopped
- 1/4 cup white vinegar
- 1 tablespoon oregano
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 2 teaspoon minced garlic
- 1 fresh lime (squeezed)
- 1 cup beef broth
Instructions
- Place the chuck roast in an instant pot. Use at least a 6 quart instant pot.
- Place all the other ingredients into a food processor and process until well combined. Pour the mixture on top of the roast in the instant pot.
- Add the lid and set the valve to sealing.
- Set the pressure for 90 minutes.
- When the cooking is finished, do a quick release to release the pressure.
- Remove the lid and shred the meat an stir back into the sauce.
- Serve on your favorite tortillas and with your favorite toppings.
