Ingredients

  • 3 pound chuck roast
  • 2 chipotle chilies in adobo chopped
  • 1/4 cup white vinegar
  • 1 tablespoon oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 2 teaspoon minced garlic 
  • 1 fresh lime (squeezed)
  • 1 cup beef broth

Instructions

  1. Place the chuck roast in an instant pot. Use at least a 6 quart instant pot.
  2. Place all the other ingredients into a food processor and process until well combined. Pour the mixture on top of the roast in the instant pot.
  3. Add the lid and set the valve to sealing.
  4. Set the pressure for 90 minutes.
  5. When the cooking is finished, do a quick release to release the pressure.
  6. Remove the lid and shred the meat an stir back into the sauce.
  7. Serve on your favorite tortillas and with your favorite toppings.

Notes

  • *Refrigerate the leftovers in an air tight container for up to 5 days.
