Instant Pot Cilantro Lime Rice

Ingredients

  • 1 cup (230g) jasmine rice , rinsed
  • 1 tablespoon (15ml) vegetable oil or unsalted butter
  • 3 (12g) garlic cloves , minced
  • ½ teaspoon (4g) fine sea salt or table salt
  • 1 cup (250ml) cold water or unsalted chicken stock
  • 1 - 2 tablespoons (15ml - 30ml) lime juice
  • Zest from one lime
  • 15 grams fresh cilantro , finely chopped

  1. Sauté Garlic and Rice: Heat up Instant Pot using “Sauté More” function. Wait until Instant Pot says “HOT”. Rinse rice under cold water, then drain well. Add 1 tbsp (15ml) vegetable oil or unsalted butter in Instant Pot. Ensure to coat oil over the whole bottom of the pot. Add in minced garlic, then sauté for 30 secs until fragrant. Add in 1 cup (230g) Jasmine rice and ½ teaspoon (4g) salt, then stir and saute for another 30 secs.
  2. Deglaze Instant Pot: Pour in 1 cup (250ml) cold water or unsalted chicken stock, then deglaze by scrubbing all the flavorful brown bits off the bottom of the pot with a wooden spoon. Give it a quick mix.
  3. Pressure Cook Rice: With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position. Pressure Cook at High Pressure for 5 minutes, then Natural Release for 10 minutes. Open the lid carefully.
  4. Add Lime Juice, Zest, and Cilantro: Add in 2 tbsp (30ml) lime juice, lime zest, and finely chopped fresh cilantro. Then gently fluff rice with a rice paddle.
  5. Season & Serve: Taste and season rice with more kosher salt if needed. Adjust the amount according to your preferences and what you're serving it with. Notes

  • Rice: If you substitute Jasmine Rice with other types of rice, adjust the pressure cooking time accordingly.
  • Lime: You can substitute lime with lemon. Keep in mind limes are usually smaller and less sour than lemons. So, the flavor profile will slightly differ according to the lemon you use. Adjust the amount accordingly.
  • Unsalted Chicken Stock & Unsalted Butter: We develop recipes using unsalted ingredients for more control and consistency in the dish’s flavors. If you substitute with salted ingredients, taste and adjust the saltiness accordingly.
