Instant Pot Coconut Rice

Fragrant and so fluffy, this Instant-Pot Coconut Rice pairs well with so many meals! It's so easy to make, too!

Ingredients

  • 1 cup jasmine rice
  • 1/2 cup full-fat coconut milk
  • 3/4 cup water or chicken broth
  • 1/4 teaspoon salt
  • 1/2 teaspoon sugar (optional)

Instructions

    Cup of Yum
  1. Place the rice in a mesh strainer and rinse under cold water until the water runs clear.
  2. Combine all the ingredients in the Instant Pot. Set to "Sealing" and press the "Rice" button.
  3. Once cooked, let steam release naturally for at least 10 minutes.
  4. Fluff and DEVOUR!
