Instant Pot Corn on the Cob

Ingredients

  • 6 ears Corn on the Cob (can use 4 to 6 ears), shucked and halved
  • 4 cups water
  • 1/2 cup heavy whipping cream (or 1 cup half and half*)
  • 1 Tbsp granulated sugar
  • 3 Tbsp salted butter

Instructions

  1. Peel and break your corn ears in half.
  2. Plug in the instant pot and add water, cream, sugar and melted butter to the inner cooking pot, stirring to combine.
  3. Place the corn in rings standing up to fit more. The liquid will not cover the ears completely.
  4. Cover, seal the vent and set on manual high pressure for 5 minutes then quick release the steam completely before opening lid. 
  5. Remove the corn with tongs and rest 5 minutes before serving. The corn will be delicious on its own but you can garnish with additional butter or seasoning if desired.

Notes

  • *If using 1 cup half and half, use 3 1/2 cups water. the recipe should have 4 1/2 cups total liquid. 
  • **Note that most of the liquid, cream, butter and sugar stay in the pot and there is not a simple way to reflect that in the nutrition label.
