Instant Pot Corned Beef
The fastest way to make a corned beef dinner is in your pressure cooker! The Instant Pot turns this meat into a tender meal! Eat it plain or dress it up with sauerkraut, Swiss cheese, and Thousand Island dressing.

Ingredients
- 1 medium onion, sliced
- 4 garlic cloves, minced
- 1 corned beef brisket (about 3-5 lbs)
- chicken broth or beef broth to cover (between 4-8 cups)
- optional toppings: Swiss cheese, sauerkraut, thousand island dressing, fried egg
Instructions
- Place onion and garlic in the bottom of the Instant Pot. Place the corned beef brisket on top fat side up and sprinkle with spice mixture the beef came with.
- Add enough chicken broth or beef broth to cover the brisket completely. Close lid to seal.
- Select the manual setting on your Instant Pot; Adjust pressure to high and set the time for 90 minutes. When finished cooking, use the quick release method. Beef should be fork tender.
- When cool enough to remove, slice against the grain or shred the corned beef depending on your preference.
- Ways to eat this: Eat it plain or top with Swiss cheese, sauerkraut, thousand island dressing, or a fried egg. Eat it on Rye bread.
- SLOW COOKER INSTRUCTIONS – Cook the corned beef in a slow cooker on low for 6-8 hours or on high for 4-6 hours.STOVE TOP INSTRUCTIONS – In a large pot, bring mixture to a low simmer on t and cook on top of the stove for 50 minutes per pound.
