Instant Pot Creamy Ranch Chicken Dinner

Ingredients

  • 4 boneless skinless chicken breasts
  • 4 Russet potatoes peeled and cut into 2 inch pieces
  • 2 cups baby carrots
  • 1 packet of dry ranch dressing mix
  • 1 can cream of chicken soup (10 oz)
  • 1/2 cup milk
  • 1/2 cup water

Instructions

  1. In a small bowl, whisk together the milk, cream of chicken soup and the ranch dressing mix.
  2. Place the water in the bottom of the instant pot. Then add in the chicken, potatoes and carrots.
  3. Pour the cream of chicken soup mixture over the top of these ingredients in the instant pot.
  4. Seal and instant pot and cook on high pressure for 20 minutes with a quick release.
  5. Then serve the chicken, potatoes and carrots with the sauce poured over the top from the instant pot and enjoy!

Notes

  • *Refrigerate the leftovers in an air tight container for up to 5 days. 
  • *You can also use 3 regular carrots (peeled and cut into large pieces) instead of the baby carrots if you prefer. 
  • *Any cream soup would work great in this recipe instead of the cream of chicken soup.
