Notes

  • This makes A LOT of beef, so be ready to serve a crowd.
  • This recipe was tested in a 6-quart Instant Pot. You'll need to make sure your cut of beef will fit in your Instant Pot.
  • You can swap in 1 cup of red wine or a very dark beer in place of 1 cup of the beef stock to add an extra layer of flavor.
  • You can shred the cooked beef with two forks - it should be very tender and come apart easily - or you can slice it with a knife. Whichever way you prefer!
  • Provolone cheese is classic for these sandwiches, but you could also swap in some cheddar cheese if you prefer.
  • Serving suggestions: I highly recommend this Hashbrown Casserole recipe. It's pure comfort food. Our Ritz Cracker Mac and Cheese is also a wonderful side dish to serve with French Dips. Or make this Copycat Panera Mac and Cheese in minutes!
