Instant Pot Popcorn Recipe (only 2 ingredients)

Ingredients

  • 1/2 Cup popcorn kernels
  • 2 Tablespoons coconut oil Can also use avocado oil, EVOO

Instructions

  1. Set Instant Pot to "saute" and add oil to the pot.
  2. Allow the oil to heat up for about 2 minutes, or until your instant pot displays the word “hot." The oil will start to sizzle.
  3. Add popcorn kernels and stir for about 1 minute before putting lid on top.
  4. After about 2-3 minutes of heating while covered, the kernels will start popping. Shake or stir every minute or so to move the kernels for even cooking.
  5. After about 5 minutes, the kernels should be mostly popped. When the popping becomes sporadic, turn off the Instant Pot and enjoy.
