Instant Pot Pork Chops with Apples

Ingredients

  • 6 Smithfield All Natural Bone-In Pork Chops
  • 2 tablespoons salted butter divided
  • salt & pepper for seasoning
  • 1 cup + 2 tablespoons water divided
  • 4 Granny Smith apples peeled and sliced into 1-inch thick wedges
  • 1 teaspoon apple pie spice
  • 2 tablespoons brown sugar
  • 1 bundle of fresh thyme about 15 sprigs
  • 1 tablespoon cornstarch

  1. Heat the Instant Pot on "saute" mode. While the Instant Pot heats up. Season the Smithfield All Natural Bone-In Pork Chops with salt and black pepper on  both sides. Place butter in Instant Pot then working in batches, begin to brown 2 pork chops at a time. About 2-minutes on each side. Remove and set on a plate, then repeat until all the pork chops are done browning.
  2. While the pork chops brown, peel and slice the apples. Place in a bowl of water to prevent browning until ready to use.
  3. Once the pork chops are done cooking, deglaze the Instant Pot with one cup of water until all the brown bits have been pulled up. (this will prevent the burn error from appearing during cooking). Then, drain the apples and add to the Instant Pot. Sprinkle the apple pie seasoning and brown sugar on top. Mix well, then place the pork chops on top of the apples, layering the pork chops one-by-one. Add the bundle of fresh thyme on top.
  4. Secure the lid to the Instant Pot, making sure the pressure valve is set to "sealing". Turn off the Instant Pot then turn back on and set to "meat" for 4 minutes. While the pork chops cook, make a cornstarch slurry with the two tablespoons water to one tablespoon cornstarch. Mix and set to the side.
  5. Once the Instant Pot is done cooking let it naturally rest for 4 minutes then carefully force pressure. Carefully, remove the bundle of thyme, followed by the pork chops to a plate. Using a slotted spoon remove the apples and set to the side for serving.
  6. Turn the Instant Pot off, then back on again to "saute" mode. Using a silicone spatula begin to stir the liquid. Then slowly add in the cornstarch slurry. Stir until thick. Then turn off the heat. Serve sweet but savory gravy on the side with the pork chops and apples.

Notes

  • This is the perfect recipe for anyone who thinks they don't like pork! Using the Instant Pot keeps them tender and juicy.
