Instant Pot Ramen Bowls
Instant Pot Ramen Bowls combine shiitake mushrooms, sliced onions, garlic, and ginger simmered in vegetable broth with soy sauce and rice vinegar, creating a flavorful ramen base. Ramen noodles are cooked directly in the pot after pressure cooking, resulting in a quick and savory noodle soup. Toppings like jalapeno, edamame, green onions, and chili sauce add texture and spice options for a customizable meal.
Ingredients
- 4 cups vegetable broth low-sodium, or stock
- 5 ounces shiitake mushrooms sliced
- 1 cup onion white, yellow, or red, thinly sliced
- 1 TBSP ginger jarred works in a pinch, freshly grated
- 4 cloves garlic minced
- ¼ cup soy sauce low-sodium
- 2 TBSP rice vinegar
- 4-6 ounces ramen noodles see notes, uncooked
TASTY TOPPINGS
- 1 jalapeno pepper large, thinly sliced
- ½ cup edamame (cooked + shelled)
- ¼ cup green onion and/or fresh cilantro, chopped
- 2-4 tsp chili sauce spicy
- 1-2 tsp sesame seeds toasted

Instructions
- Sodium is always a super personal matter and also depends greatly on the type of soy sauce and broth used. Feel free to customize this to taste, as you can always add less soy sauce to begin with and add more later if desired. For a spicy ramen bowl, feel free to swirl some chili sauce into the broth as well!
- Add all ingredients except for noodles and toppings to your Instant Pot. Seal the lid and vent and set to 5 minutes HIGH PRESSURE on manual.
- It'll take about 10-12 minutes to come to pressure and 5 minutes active cooking time. When the Instant Pot beeps, quick release the pressure by flipping the valve from sealing to venting. Steer clear of the steam as it should shoot out pretty fast! Once the pressure has released the lid will unlock.
- Remove the lid and switch the pot to the sauté function. Add your ramen noodles and cook for approx. 3-4 minutes or cook according to package instructions. Once the noodles are tender you're good to go. Stir the ramen into the broth and divide into two large bowls. Pile high with toppings and add any additional seasoning to taste. Enjoy!
Notes
- Use dried ramen noodles from the international aisle, preferring non-fried varieties without seasoning packets for a lighter broth.
- Cooking noodles in the Instant Pot after pressure cooking the broth reduces pots used and infuses noodles with flavor.
- Adjust soy sauce to control saltiness since sodium varies; add chili sauce to taste for preferred heat level.
- For a soupier ramen, add extra broth before pressure cooking and adjust seasonings afterward.
- Prepare toppings separately and add just before serving to keep textures distinct and fresh.
