Ingredients

SALSA CHICKEN
  • 1 yellow onion diced, small
  • 2 cloves garlic (minced)
  • 8 ounces salsa choose your favorite!, jarred
  • ¼ cup water
  • 1 TBSP taco seasoning (homemade or store bought)
  • ½ tsp salt fine
  • 1 pound chicken breast or a combo of breast + thighs, boneless skinless
BURRITO BOWL INGREDIENTS
  • 2 cups yellow rice cooked
  • 3-4 cups lettuce shredded
  • 1 can black beans drained and rinsed, 15 oz
  • 1 can sweet corn drained, 15 oz
  • 1-2 cups Pico de Gallo
TASTY TOPPINGS (choose your favorites)
  • sour cream
  • guacamole
  • cilantro fresh, chopped
  • red onion pickled
  • jalapeno pepper sliced
  • tortilla strips or tortilla chips, crispy
  • cheese grated
  • lime wedges, to garnish

Instructions

  1. Add salsa, diced onion, garlic, water, taco seasoning, salt, and pepper to the Instant Pot. Stir then place the chicken on top and gently press them into the salsa mixture.
  2. NOTE: during this step you can also mix in the black beans and corn if you'd like! I keep mine separate since the kiddo likes her veggies on the side instead of mixed in.
  3. Place the lid on the Instant Pot, lock into place, ensuring the vent is in the sealed position.
  4. Set Instant Pot to 10 minutes on the "HIGH" pressure setting. It will take about 10 minutes to come to pressure and 10 minutes of active cook time.
  5. When the IP beeps to signal it is finished, allow natural pressure release. This typically takes 8-10 minutes.
  6. Remove the chicken with tongs and shred. You can use forks, shred the chicken in a stand mixer, or simply chop it into small pieces. Add the chicken back into the slow cooker and mix well into the sauce. Taste and add any additional seasoning desired.
  7. Portion rice and lettuce into each bowl and top with the salsa chicken. Add all your favorite toppings and extras for a totally custom burrito bowl. Enjoy!

Notes

  • If you'd like to have additional salsa chicken on hand for recipes throughout the week (tacos, nachos, quesadillas, tortilla soup, enchiladas, salads etc...) feel free to double the salsa chicken portion of the recipe! The cook times will be the same.
