Instant Pot/ Slow Cooker Chicken & Wild Rice Soup - No Cream/Milk

This Instant Pot/ Slow Cooker Chicken & Wild Rice Soup recipe has no dairy at all in it, which is a nice change of pace for when you need a lighter meal!

Ingredients

  • 2 boneless skinless chicken breasts
  • 6 cups chicken stock
  • 1 cup wild rice
  • 3 cloves of garlic minced
  • 1 white onion diced
  • 3 carrots peeled and diced
  • 3 stalks celery diced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 2 bay leaves
  • 2 Russet potatoes diced small

Instructions

Slow Cooker Instructions:
    Cup of Yum
  1. Place chicken in the bottom of your slow cooker.
  2. Stir in the remaining ingredients.  Cover and cook on low heat for 6-8 hours.
  3. When ready, remove the chicken breasts onto a plate and shred them. Mix back into the soup.
  4. Serve and enjoy.
Instant Pot Directions
  1. To slow cook, use the directions above and the slow cook setting.
  2. For pressure cooking, combine all of the ingredients above in the instant pot.
  3. Press the Soup button and cook for 45 minutes. ( should be the default time that appears when you push the soup button.
  4. When ready, remove the chicken breasts onto a plate and shred them. Mix back into the soup.
  5. Serve and enjoy!
