Ingredients

Instant Pot Spam Fried Rice Ingredients:
- 2 Cups brown rice
- 1 Can Spam
- 2 medium carrots
- 1 medium onion
- 2 Tbsp Lazy Ginger
- 2 garlic cloves
- 1 Tbsp extra virgin olive oil
For The Air Fryer:
- 2 Tbsp soy sauce
- 1 Tbsp rice vinegar
- 2 medium eggs
- ½ Tsp brown sugar
Add Later:
- 3 Cups frozen peas
- 1 Tbsp soy sauce
- 1 Tbsp rice vinegar
Instructions
- Peel and dice your carrots and onion. Thinly slice your lazy ginger, peel and thinly slice your garlic. Load into the instant pot and add extra virgin olive oil. Place on sauté, and sauté until the onion starts to soften.
- Cancel sauté and add the spam, being careful so that it doesn’t burn. Add brown rice along with 2.5 cups (600ml) of water and stir.
- Place the lid on the instant pot, set the valve to sealing and cook for 18 minutes on manual/pressure cook on high pressure, followed by a 5 minute natural pressure release.
- While the instant pot is cooking add the air fryer ingredients into a jug and beat the eggs into the seasoning. Load into silicone muffin cups and air fry for 7 minutes at 180c/360f.
- When the instant pot is done, and you have released pressure stir the fried rice. Add in the egg mixture as well as the frozen peas, soy sauce and rice vinegar and then serve.

Notes
- Eggs. If you don’t want an egg fried rice and just want a delicious Hawaiian rice dish, then you can skip the egg step.
- Peas. Because the instant pot is hot, your frozen peas will naturally reheat in the instant pot. You are welcome to defrost them earlier if you prefer.
