Irish Apple Crumb Cake

This beautifully moist and flavor packed apple cake is an easy one bowl cake topped with a crumble mixture. It's subtly spiced and sweet and the apples really shine in it! Have had nothing but rave reviews for this recipe.

Ingredients

For the cake:
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar 150g
  • 2 eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1.5 cups flour, sifted 200 g
  • 1 teaspoon baking powder
  • pinch of salt
  • 1 teaspoon cinnamon powder
  • 2 medium apples, peeled, cored and chopped into 1/2 inch pieces about 300 g, or heaped 2 cups
For the crumble:
  • 1/4 cup white sugar 50 g
  • 1/4 cup flour 32 g
  • 1/4 cup butter 56g

Instructions

For the cake:

  1. Heat oven to 180C. Grease and line an 8 or 9 inch pan with parchment paper.
  2. Cream the butter and brown sugar in large bowl, 2-3 minutes on medium speed until light and fluffy.
  3. Add the eggs one at a time until mixed, then vanilla.
  4. Add the flour, baking powder, salt and cinnamon and fold until just combined, then fold in the apple cubes. Batter will be thick! Spread into prepared pan.
  5. Combine all the crumble ingredients in a small bowl, pinching together with fingertips until small crumbs form, then scatter evenly onto cake surface.
  6. Bake for 40-45 minutes until toothpick comes out clean.

Notes

  • This recipe is adapted from The Clever Carrot, who adapted it from Donal Skehan.
  • The cake is delicious plain, and phenomenal served warm with vanilla ice cream and caramel sauce.
  • I like using one red apple and one green apple just to mix things up, but either or will work great.
