Irish Colcannon
Colcannon is an Irish dish that has been around for centuries! It is super easy and normally served for St. Patrick’s Day in the US, but great any time of the year!

Ingredients
- 2 lbs potatoes
- 1 tsp salt
- 3 lices Bacon
- 2 cups sliced cabbage
- 4 liced green onion
- 2 tbsp butter
- 1/2-3/4 cup milk
Instructions
- Peel potatoes. Barely cover with water in a medium saucepan. Bring to boil. Reduce heat and low boil, until tender.
- Crisp up 3 slices bacon.
- Slice about 1/4 of a small cabbage. About 2 cups.
- Drain potatoes, when soft.
- In same pan, add butter, cabbage and green onion. Saute until soft.
- Rice potatoes, or mash with potato masher, with milk.
- Once cabbage is soft, add that and bacon and milk to mashed potatoes. Mix lightly. Salt and pepper to taste.

Notes
- Cook potatoes until tender, but not mushy.
- Use potato ricer, potato masher or mixer to mash potatoes.
- Best using unsalted butter.
