Irish Oatmeal Bread

Irish Oatmeal Bread combines steel-cut oats soaked in molasses and boiling water with bread flour and yeast to create a rustic loaf. The oats add a hearty texture and a subtle sweetness from the molasses, contributing to a dense yet tender crumb. This bread uses a two-step proofing process to develop flavor and structure and is finished with an egg wash for a shiny crust.

  • Warm milk activates the yeast; allow the yeast mixture to become frothy after 5 minutes before combining with dough.
  • Brush the loaf with beaten egg before baking to develop a shiny, golden crust.
