Irish Soda Bread Muffins with Cheddar and Jalapenos

I transformed the traditional Irish Soda Bread recipe into smaller muffins and added a Texas twist with cheddar and jalapenos.

Ingredients

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 tablespoons white sugar
  • 1/2 teaspoon baking soda
  • 1 3/4 cups buttermilk
  • 1 egg
  • 1/4 cup butter melted
  • 1 cup shredded cheddar
  • 4 jalapeños seeded and diced

  1. Preheat oven to 375 degrees F. Line a muffin tin with paper liners, or spray muffin tin with cooking spray.
  2. Mix flour, baking powder, salt, sugar, and baking soda in a large bowl.
  3. Whisk together buttermilk and egg together in a small bowl. Stir into flour mixture. Fold butter into the batter.
  4. Stir in shredded Cheddar ad diced jalapenos.
  5. Spoon batter into the prepared muffin tin.
  6. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 30 minutes.
