Israeli Salad combines diced tomatoes, cucumber, colorful bell pepper, and red onion with fresh parsley and mint, dressed simply with lemon juice, olive oil, salt, and pepper. It results in a crisp, refreshing salad that highlights fresh vegetables and herbs, often served as a side or light snack.
Ingredients
- 2 cups diced tomatoes
- 2 cups cucumber diced
- 1 cup bell pepper or any color, orange
- 1/4 cup red onion diced
- 1/3 cup parsley flat-leaf, finely chopped
- 2 tbsp mint finely chopped
- 2 tbsp lemon juice fresh
- 1 tbsp olive oil
- salt to taste
- black pepper to taste
Instructions
- Add all of the ingredients to a mixing bowl and stir to combine.
- Serve immediately or refrigerate for up to 2 days.
