Ingredients

  • 2 cups diced tomatoes
  • 2 cups cucumber diced
  • 1 cup bell pepper or any color, orange
  • 1/4 cup red onion diced
  • 1/3 cup parsley flat-leaf, finely chopped
  • 2 tbsp mint finely chopped
  • 2 tbsp lemon juice fresh
  • 1 tbsp olive oil
  • salt to taste
  • black pepper to taste
