Israeli Salad

Ingredients

  • 2 cups English cucumber diced
  • 1 bell pepper finely diced, small
  • 2 cups tomatoes diced, ripe
  • 1/3 cup red onion finely chopped
  • 5 tablespoons flat-leaf parsley finely chopped
  • 2 tablespoons mint finely chopped (optional, fresh
  • 3 tablespoons lemon juice fresh
  • 3 to 4 tablespoons extra-virgin olive oil
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large mixing bowl, combine diced cucumbers, bell peppers, tomatoes, red onion, parsley, and mint if using.
  2. Add lemon juice, olive oil, salt, and pepper to the bowl. Toss everything together until well-mixed.
  3. Serve the salad immediately, or cover and refrigerate to let flavors meld together for up to 2 hours before serving.
