Ingredients

  • 300 gms carrot grated, 10 oz
  • 180 gms almond meal 2 cups
  • 180 gms caster sugar ¾ cup + 1 tbsp, aka superfine sugar
  • 3 egg
  • 50 gms all-purpose flour 6 ½ tbsp
  • 8 gms baking powder 2 tsp
  • 1 tsp vanilla extract
  • 1 tsp lemon essence or grated zest
  • icing sugar to dust

Notes

  • For a gluten-free version, substitute the all purpose flour with the same amount of almond meal.
