Ingredients
- 300 gms carrot grated, 10 oz
- 180 gms almond meal 2 cups
- 180 gms caster sugar ¾ cup + 1 tbsp, aka superfine sugar
- 3 egg
- 50 gms all-purpose flour 6 ½ tbsp
- 8 gms baking powder 2 tsp
- 1 tsp vanilla extract
- 1 tsp lemon essence or grated zest
- icing sugar to dust
Notes
- For a gluten-free version, substitute the all purpose flour with the same amount of almond meal.
