Ingredients

  • 8 cups romaine lettuce chopped
  • 1 celery thinly sliced, stalk
  • 1 cup cherry tomato halved
  • 1 red pepper (seeded and diced)
  • 1 cup cucumber slices
  • ¼ cup parsley minced
  • 8 ounces tuna drained, in water
  • 8 artichoke hearts drained and quartered, canned
  • 1 cup cannellini beans drained and rinsed, canned
  • 2 tablespoons extra virgin olive oil
  • 1 lemon juice juice of
  • salt to taste
  • black pepper to taste

Instructions

  1. Place all salad ingredients (romaine through cannellini beans) in a large bowl.
  2. Drizzle bowl with olive oil and lemon juice then use a pair of tongs to toss well.
  3. Season with salt and pepper to taste before serving.
