Italian Pizzelle Recipe
Pizzelle are light and crispy cookies made with flour, eggs, butter, and sugar. These addicting treats have been treasured by generations of Italians — give them a try!
Ingredients
- 4 egg large
- 3/4 cup granulated sugar
- 3/4 cup butter melted and cooled to room temp, unsalted
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp baking powder
Instructions
- Preheat a pizzelle iron. Combine eggs and sugar in a large mixing bowl. Whisk until the eggs are light and have doubled in volume.
- Add in melted butter and vanilla extract, and mix until combined.
- In a separate bowl, combine flour and baking powder. Fold in dry ingredients to the egg mixture.
- Spoon a heaping tablespoon of batter onto the hot iron. Cook for about a minute, or until the pizzelle is golden brown. Place on a cooling rack, and enjoy!
