Italian Pizzelle Recipe

Ingredients

  • 4 large eggs
  • 3/4 cup granulated sugar
  • 3/4 cup unsalted butter melted and cooled to room temp
  • 1 tsp vanilla extract
  • 2 cups all purpose flour
  • 2 tsp baking powder

  1. Preheat a pizzelle iron. Combine eggs and sugar in a large mixing bowl. Whisk until the eggs are light and have doubled in volume.
  2. Add in melted butter and vanilla extract, and mix until combined.
  3. In a separate bowl, combine flour and baking powder. Fold in dry ingredients to the egg mixture.
  4. Spoon a heaping tablespoon of batter onto the hot iron. Cook for about a minute, or until the pizzelle is golden brown. Place on a cooling rack, and enjoy!
