Italian Rice Salad
White rice mixed with tuna, fresh tomatoes, Swiss cheese, olives, and eggs, make this Italian Rice Salad a great lunch or a light dinner!
Ingredients
- 4 cups rice cooked, long-grain
- 3 cups tomato diced, fresh
- 2 cups black olives chopped
- 2 cups swiss cheese diced, or your favorite kind
- 4 egg hard boiled, chopped
- 1 can (6.5 oz) tuna
- 4 tbsp. extra virgin olive oil
- 2 tbsp. dill chopped
- salt to taste
- black pepper to taste
Instructions
- Place all of the the ingredients into a large bowl and mix well. (Note: use the oil from the tuna can as well).
- Garnish your salad with more dill if desired.
