Italian Rice Salad

White rice mixed with tuna, fresh tomatoes, Swiss cheese, olives, and eggs, make this Italian Rice Salad a great lunch or a light dinner!

Ingredients

  • 4 cups rice cooked, long-grain
  • 3 cups tomato diced, fresh
  • 2 cups black olives chopped
  • 2 cups swiss cheese diced, or your favorite kind
  • 4 egg hard boiled, chopped
  • 1 can (6.5 oz) tuna
  • 4 tbsp. extra virgin olive oil
  • 2 tbsp. dill chopped
  • salt to taste
  • black pepper to taste

Instructions

    Cup of Yum
  1. Place all of the the ingredients into a large bowl and mix well. (Note: use the oil from the tuna can as well).
  2. Garnish your salad with more dill if desired.
