Ingredients

  • 2 cups (16 oz/450 g) whole milk ricotta cheese* , at room temperature
  • 1½ cups (12 oz/340 g) granulated sugar
  • ¾ cup (6 oz/170 g) butter, at room temperature
  • 3 large eggs, at room temperature
  • Zest and juice of 1 lemon
  • 1 teaspoon almond extract
  • 1½ cups (7½ oz/213 g) all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 3 to 4 plums, pitted and sliced
  • Powdered sugar, for garnish (optional)
