- 2 cups (16 oz/450 g) whole milk ricotta cheese* , at room temperature
- 1½ cups (12 oz/340 g) granulated sugar
- ¾ cup (6 oz/170 g) butter, at room temperature
- 3 large eggs, at room temperature
- Zest and juice of 1 lemon
- 1 teaspoon almond extract
- 1½ cups (7½ oz/213 g) all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- 3 to 4 plums, pitted and sliced
- Powdered sugar, for garnish (optional)
