Ingredients

  • 1 pound Italian turkey sausage casings removed, links
  • 1 yellow onion , chopped
  • 5 garlic minced, cloves
  • 4 cups chicken broth
  • 2 cups water
  • 14.5 ounces diced tomatoes , undrained
  • 1 teaspoon basil dried
  • 1/4 teaspoon black pepper coarse ground
  • 1/4 teaspoon red pepper flakes
  • 9 ounces cheese tortellini
  • 6 ounces spinach chopped, fresh
  • 1/2 cup Parmesan Cheese , shredded

Instructions

  1. Add sausage to a large heavy-bottomed pot.
  2. Cook on medium-high heat, crumbling it as you cook, searing it until slightly crispy (about 4-5 minutes).
  3. Lower heat to medium, add in onion and garlic and stir.
  4. Add chicken broth, water, diced tomatoes (with liquid), dried basil, black pepper and red pepper flakes.
  5. Stir well and bring to a simmer.
  6. Add in the tortellini and cook for 6-8 minutes on a simmer (if you rapidly boil it will break the tortellini).
  7. Add in spinach and cook for 5 minutes.
  8. Serve in bowls topped with Parmesan cheese.
