Italian Sub

The Italian Sub layers a variety of deli meats—pepperoni, salami, ham, capicola, and mortadella—with provolone cheese on sub rolls spread with a seasoned mayonnaise and drizzled with an olive oil and vinegar mixture. Ingredients

  • 1/2 cup mayonnaise
  • 3 tablespoons red wine vinegar divided
  • 2 teaspoons Italian seasoning divided
  • salt
  • black pepper
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon Parmesan Cheese
  • 4 sub rolls
  • 8 oz provolone cheese sliced
  • 1/4 lb pepperoni deli sliced
  • 1/4 lb salami deli sliced
  • 1/4 lb ham deli sliced
  • 1/4 lb Capicola deli sliced
  • 1/4 lb mortadella deli sliced
  • 1/2 cup onion sliced
  • 1-2 tomato sliced
  • 3 cups lettuce shredded
  • banana peppers or peperoncini

Instructions

  1. In a small bowl, combine the mayonnaise, 1 tablespoon of the red wine vinegar, and 1 teaspoon of the Italian seasoning. Season to taste with salt and pepper. Set aside.
  2. In another bowl, whisk together the olive oil, the remaining 2 tablespoons of vinegar, the parmesan, and the remaining 1 teaspoon of Italian seasoning. Season to taste with salted pepper.
  3. Cut the sub rolls in half. Divide the mayonnaise mixture evenly between the sandwiches, spreading some on each half of the roll.
  4. Top the bread with even amounts of the cheese, then even amounts of all of the meats. (I like to place even amounts of cheese and meats on each side of the sandwich, so that the vegetables are in the center.)
  5. Add the onions, tomatoes, peppers, and lettuce to the sandwiches. Drizzle the olive oil mixture over the lettuce.
  6. Fold the sandwiches in half. If desired, cut the sandwiches in half and serve.
